Dates, what to expect at the market and how to pair a truffle weekend with Barolo country.

The most expensive smell in Italy

Every autumn the small Piedmontese town of Alba becomes the capital of the white truffle, Tuber magnatum. The truffles cannot be farmed; they are found at night in the oak and poplar woods of the Langhe and Roero by trifolau, hunters who guard their spots and their dogs with equal care, and sold by the gram at prices that change with every week of the season.
The fair runs at weekends from early October to early December. At its heart is the truffle market, where every specimen is checked by judges before sale and the aroma fills the hall. Around it are tastings, cooking demonstrations and stalls of hazelnuts, cheeses and wines from the surrounding hills.
Stay in the Langhe rather than in Alba itself: the vineyards of Barolo and Barbaresco are a short drive away, the hills turn red and gold in October, and a plate of fresh tajarin pasta with white truffle shaved at the table is the meal of the year.

Sold by the gram, priced by the week.

Plan your weekend

  1. Saturday morning: the truffle market in Alba
  2. Saturday afternoon: a Barolo tasting in La Morra
  3. Sunday morning: a truffle hunt with a trifolau and his dog
  4. Sunday lunch: tajarin with white truffle

Buying a truffle

Tip
Buy only inside the official market, where truffles are checked. A good one is firm and intensely fragrant. Wrap it in kitchen paper, keep it in the fridge and eat it within a few days.
